Mini Vanilla Doughnuts

I bought the Babycakes doughnut maker on clearance and made these super fun doughnuts.

Ingredients

Batter
1¾ cup Miracle Flour Blend
¾ tsp. xanthan gum
1½ tsp. baking powder
¼ tsp. baking soda
¼ tsp. Sea Salt
½ cup pure cane sugar
4 TBL. unsalted butter, melted and cooled to room temperature
4 TBL. Butter Flavored Palm Oil, melted and cooled to room temperature
½ tsp. Pure vanilla
¾ cup greek yogurt, room temperature
2 eggs, slightly beaten

Glaze
1 cup confectioners sugar
2-3 tsp. of Coconut milk, more if needed
¼ tsp. pure vanilla


Instructions

1. Mix dry ingredients well with wire whisk.
2. Add everything else and mix well.
3. Heat your Babycakes iron. Put dough into pastry bag. I used disposable, but you could just use a ziploc too. Nip off a corner and squeeze batter into hot iron. Heat for 3 minutes and flip for 1-2 more. I let cool for glaze and for sugars I go ahead and roll them in it. It sticks better if doughnuts are warm.
