How’s it going?

I gave a Paleo Challenge and would love to know how it is going?  If you took the 40 day challenge, by now you should seriously be reaping the rewards.  If you have not taken the plunge, go ahead and dive into a better way of eating to seriously empower you. 

Here is my Paleo Pot Pie recipe:  

1 paleo pizza dough (available at GFM or Whole Foods Lexington or Louisville); Your favorite veggies. We like sweet potato or rutabaga, carrots and celery.  Pre-cooked for tenderness and chopped into desired cubes.  3-4 Chicken breast boiled until tender.  Cooled an shredded or chopped.  You decide.  Gravy:  3 cups Imagine GF Chicken Broth, 2 tsp. dried thyme, 1 tsp sea salt, ½ tsp course pepper, ½ tsp granulated garlic, ¼ cup Tapioca starch + 3 TBL of more chicken broth.  Stir until dissolved.  This is your thickener.  

In a medium skillet or pot over medium high heat:  Add chicken broth and seasonings.  Bring to a boil, add your thickener and continue stirring until thick.  Remove from heat. Spray Pyrex 13×9 dish with olive oil spray.  Add veggies and chicken.  Pour gravy over and stir.  Roll our dough with tapioca flour to assist against sticking. I roll it on parchment and lift the parchment and flip dough onto the top of the dish.  Cut off excess and slit through center.  Bake at 375 for 20 minutes or until golden and bubbly. Enjoy.
