Growing up my Mom would make us Salmon Patties (Croquettes).  I hadn’t had those in years.  Made some last night, not quite sure how the family would react.  Connor said it’s not “bad”.  Not bad from an eleven year old speaks volumes.

Ingredients

2 small cans salmon fillet (or fresh salmon)
 1 green onion chives, sliced paper-thin and chopped
 2 dashes of granulated garlic
 1 egg
 ½ cup gluten-free bread crumbs
 salt and pepper to taste

Instructions

1. Toss all well until well mixed.
 2. Heat skillet with oil (I used olive oil). Make patties with hands and squeeze mixture tightly together, lay in heated pan. Cook over medium high heat for about 3-5 minutes each side. They should be desired color and crispness. I personally like them crispy.

*Serve with lemon or ketchup. Seriously, kids love them with ketchup.
