Cinnamon Rolls

These Cinnamon Rolls are made from our Yeasty Flour Blend. These are my revised version. They are awesome!!

Ingredients

DRY
½ cup Quinoa Flour (That’s right)
½ cup Sweet Rice Flour (I can only find it online through Gluten Free.com)
¼ cup Millet Flour
¼ cup Sorghum Flour
½ cup Potato Starch, sifted
1 cup Tapioca Starch, sifted
2 tsp. Guar Gum (Gluten Free.com)
1 TBL. Yeast (rapid rise)
¼ tsp. fruit pectin (Pomona’s)
¼ tsp. Cream of Tartar
1½ tsp. Celtic Sea Salt

WET
2 large Egg whites, room temperature
1 tsp. Apple cider vinegar
2 TBL. Local Honey
4 TBL. Unsalted Butter, melted and room temperature
1¼ cups of milk (100-115 degrees)

Cinnamon Sugar
1/4 cup pure cane sugar
1 1/2 tsp. cinnamon

Baking Instructions

Heat oven to 400 and spray oil on your round baking pan. *Check your oven with an oven thermometer to make sure it is accurate.

1. In bowl of stand mixer mix all dry ingredients and whisk gently.
2. Add Honey, Egg whites, vinegar and butter. Now add the milk a little at a time while mixing on medium speed with a paddle attachment.
3. Mix at higher speed for 5 minutes.
4. Flour your surface liberally. I used more of the yeasty blend. Using a spatula fold dough onto floured surface. Cover with flour so you can roll it out. Turn it a couple of times in the flour and roll to ½ inch thick rectangle.
5. Melt 3 TBL. butter and brush surface and sprinkle on Cinnamon sugar mixture. Roll from longest side up and over and into a log. Slice with floured knife or unflavored dental floss. Each section should be and inch and a half to two inches wide. Lay on pan and cover tightly with a towel or wrap. Leave in a very warm place for 45-60 minutes.
6. Your oven is already heated and keeping your area warm. I open mine a bit while rising. Then close, and get oven to 400. Place rolls uncovered in the oven and bake for 25 minutes or until golden brown.
7. Cook on rack in pan for 10 minutes. This is a good time to make you icing or glaze.
8. I do not frost all of mine. Just frost as we are ready to eat them. They keep better and reheat well. Then frost as needed. I made Cream Cheese Icing (under recipes/desserts) or you could use a glaze.
