Breakfast Squares

This is a wonderful breakfast/brunch recipe to take to a gathering to share.   Everyone will eat it up.
Ingredients

1 tsp. coconut oil
2 cups shredded colby jack cheese, divided
1 package of frozen hash brown patties, thawed (I get Kroger brand, not all brands are Gluten Free)
8 oz. cream cheese, softened
12 eggs
½ tsp. coarse ground black pepper
1½ cups thick sliced and diced ham, cooked
1 cup green onions (chives), divided
2-3 roma tomatoes
salt and pepper to taste on top

Instructions

1. Pre-heat oven to 450. Oil your large bar pan with oil. Crumble hash browns over bar pan and spread out evenly. Sprinkle half of the cheese evenly over hash browns. Bake 10-12 minutes until melted and golden.
2. While hash browns are in oven. Blend cream cheese until smooth. Gradually add eggs, beat after each. Add pepper.
3. Heat Saute’ pan, add oil and saute’ ham and chives. Cook 2-3 minutes until good and hot. Stir into egg mixture.
4. Remove bar pan from oven. Pour egg mixture over hash browns. Return to oven and bake 7-8 minutes, or until set. While that’s cooking, dice up your tomatoes, discard the liquid and seeds. Remove bar pan from oven and top with remaining cheese, salt and pepper. Sprinkle the remaining chives and tomatoes on top. Cut into squares. My squares were 3×3″.
